Ingredients:

  • 2 large cucumbers
  • 1 small red onion (optional)
  • 1 cup cherry tomatoes (optional)
  • 1/4 cup fresh dill or parsley (chopped)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar or apple cider vinegar
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Cucumbers: Wash and peel the cucumbers. Slice them thinly (you can use a mandolin for even slices). If you prefer, you can also cut them into half-moons or dice them.
  2. Prepare the Onion (if using): Peel and thinly slice the red onion.
  3. Combine Ingredients: In a large bowl, combine the cucumber slices, cherry tomatoes (if using), and red onion.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, vinegar, honey (if using), salt, and pepper.
  5. Toss and Serve: Pour the dressing over the cucumber mixture and toss to coat. Sprinkle with fresh dill or parsley.
  6. Chill (Optional): For best flavor, let the salad sit in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
