1 tbsp lemon juice (fresh)

¼ tsp black pepper

🍳 Instructions
1. Prepare the eggs

Peel and chop the hard-boiled eggs into medium pieces.

Add to a mixing bowl.
2. Mash the avocado

In a separate bowl, mash the avocado until creamy (smooth or chunky — your preference).

Add olive oil, lemon juice, Dijon, garlic, salt, pepper, and oregano.

Mix to create a Mediterranean-style creamy dressing.
3. Combine everything

Add chopped spinach, green onion, and cucumber to the eggs.
