Mediterranean Avocado & Spinach Egg Salad

🛒 Ingredients

Base

  • 4 hard-boiled eggs, chopped

  • 1 ripe avocado

  • 1 cup fresh spinach, chopped

  • 1–2 green onions, thinly sliced

  • 1 small cucumber, diced (optional but refreshing)

Mediterranean Dressing

  • 1 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice (fresh)

  • ½ tsp Dijon mustard

  • 1 small garlic clove, grated or minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried oregano or sumac

Optional Add-Ins (Mediterranean)

  • 2 tbsp chopped parsley or dill

  • 1 tbsp chopped olives

  • 1 tbsp crumbled feta (optional, richer version)

  • Pinch of chili flakes

  • Lemon zest for brightness


🍳 Instructions

1. Prepare the eggs

  • Peel and chop the hard-boiled eggs into medium pieces.

  • Add to a mixing bowl.


2. Mash the avocado

  • In a separate bowl, mash the avocado until creamy (smooth or chunky — your preference).

  • Add olive oil, lemon juice, Dijon, garlic, salt, pepper, and oregano.

  • Mix to create a Mediterranean-style creamy dressing.


3. Combine everything

  • Add chopped spinach, green onion, and cucumber to the eggs.

  • Spoon the avocado dressing on top.

  • Mix gently until creamy and combined.


4. Taste & adjust

Add:

  • More lemon for freshness

  • More salt/pepper for balance

  • Chili flakes if you prefer heat

Serve with:

  • Warm pita or whole-grain flatbread

  • On top of toasted sourdough

  • Over mixed greens as a protein-packed salad

  • With sliced tomatoes, cucumbers & olives

  • Wrapped in grape leaves (very Mediterranean!)
