This light Mediterranean-inspired shrimp salad is made with crisp cucumbers, tender shrimp, olive oil, herbs, and a creamy yogurt-based dressing—fresh, healthy, and ideal for warm days.

Salad
450 g (1 lb) cooked shrimp, peeled & deveined
2 large cucumbers, thinly sliced or diced
2 tablespoons red onion, finely chopped
2 tablespoons fresh dill or parsley, chopped
Creamy Dressing
½ cup plain Greek yogurt
1 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice or red wine vinegar
1 small garlic clove, minced
Salt & black pepper, to taste
Optional Add-Ins
Cherry tomatoes, halved
Crumbled feta cheese
Kalamata olives, sliced

Prepare the Shrimp
If shrimp are raw, boil in salted water 2–3 minutes until pink. Drain and cool.Mix the Dressing
In a bowl, whisk yogurt, olive oil, lemon juice, garlic, salt, and pepper until smooth.Assemble the Salad
In a large bowl, combine shrimp, cucumbers, red onion, and herbs.Add Dressing
Pour dressing over the salad and gently toss to coat.Chill & Serve
Refrigerate 15–20 minutes for best flavor. Adjust seasoning before serving.
