🛒 Ingredients
500 g (1 lb) chicken breast, sliced
2 tbsp extra-virgin olive oil
1 small onion, sliced
3 cloves garlic, minced
250 g (8 oz) mushrooms, sliced
1 tsp paprika
½ tsp black pepper
½ tsp sea salt
1 tsp Dijon mustard
1 cup chicken broth
½ cup Greek yogurt (or light sour cream)
1 tbsp lemon juice
Fresh parsley, chopped
👩🍳 Instructions
Sear chicken
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add chicken, season with salt & pepper, and cook until golden. Remove and set aside.Sauté vegetables
Add remaining olive oil. Cook onion and mushrooms until soft and browned.
Stir in garlic and paprika.Build sauce
Add Dijon mustard and chicken broth. Simmer 5–7 minutes until slightly thickened.Make it creamy
Lower heat. Stir in Greek yogurt and lemon juice until smooth (do not boil).Combine
Return chicken to skillet. Simmer 5 minutes until coated and tender.Finish
Garnish with fresh parsley and serve.
