🛒 Ingredients (Serves 4)
4 salmon fillets (about 5–6 oz / 150–170 g each)
3 tbsp extra-virgin olive oil
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped (oil-packed preferred)
½ tsp dried oregano
½ tsp dried thyme
¼ tsp paprika
Salt & freshly ground black pepper, to taste
Zest of 1 lemon
2 tbsp fresh lemon juice
½ cup crumbled feta cheese
2 tbsp fresh parsley or basil, chopped
👩🍳 Instructions
1️⃣ Preheat Oven
Preheat oven to 400°F (200°C).
Lightly grease a baking dish or line with parchment paper.
2️⃣ Season the Salmon
Pat salmon dry and place in the baking dish.
Drizzle with olive oil.
Sprinkle with garlic, oregano, thyme, paprika, salt, and pepper.
Add lemon zest and sun-dried tomatoes evenly over the fillets.
3️⃣ Bake
Bake uncovered for 12–15 minutes, depending on thickness, until salmon flakes easily with a fork.
4️⃣ Add Feta & Finish
Remove from oven and sprinkle feta cheese over the salmon.
Return to oven for 2–3 minutes, just until feta softens.
Drizzle with fresh lemon juice and garnish with herbs.
