🛒 Ingredients
2 cups fresh spinach, finely chopped (or frozen, well-drained)
1 cup crumbled feta cheese
1 large egg
¼ cup grated Parmesan cheese
2 tbsp olive oil
1 clove garlic, minced
½ tsp dried oregano
¼ tsp black pepper
Optional: chili flakes or sesame seeds
👩🍳 Instructions
Preheat oven
Preheat to 190°C / 375°F.
Line a baking sheet with parchment paper.Mix the batter
In a bowl, combine spinach, feta, egg, Parmesan, olive oil, garlic, oregano, and pepper.
Mix until well combined.Shape crisps
Scoop small spoonfuls onto the baking sheet.
Flatten slightly to form thin rounds.Bake
Bake for 15–18 minutes, until edges are golden and centers are set.Cool & crisp
Let rest 5 minutes—they crisp up more as they cool.
