🥒 Mediterranean Tzatziki Chicken Salad

🧄 Ingredients
Chicken
1½ lb (700 g) boneless skinless chicken breasts or thighs
2 tbsp extra-virgin olive oil
1 tsp dried oregano
½ tsp paprika
Salt & black pepper to taste
Juice of ½ lemon
Homemade Tzatziki Dressing
1 cup plain Greek yogurt (thick, unsweetened)
1 medium cucumber, grated & squeezed dry
2 cloves garlic, finely minced
1½ tbsp fresh lemon juice
1 tbsp extra-virgin olive oil
1 tbsp fresh dill or mint, chopped
Salt to taste
Salad Add-Ins
½ cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
¼ cup kalamata olives, sliced
2 tbsp fresh parsley or dill
Optional: crumbled feta cheese
🔪 Instructions
Cook the chicken
Season chicken with olive oil, oregano, paprika, salt, pepper, and lemon juice.
Grill or pan-sear over medium heat 6–7 minutes per side until golden and cooked through.
Rest 5 minutes, then slice or shred.Make the tzatziki
In a bowl, combine yogurt, grated cucumber, garlic, lemon juice, olive oil, herbs, and salt. Mix until smooth and creamy.Assemble the salad
In a large bowl, combine chicken, tomatoes, onion, olives, and herbs.Dress & toss
Add tzatziki and gently toss until evenly coated.Serve
Taste and adjust seasoning.
