🌿 Low-Carb Cranberry Feta Pinwheels with Cream Cheese (Mediterranean Style)

Ingredients

Base

  • 3 low-carb tortillas or 3–4 large lettuce leaves (for keto/ultra low-carb)

  • 8 oz (225g) cream cheese, softened

  • ½ cup crumbled feta (sheep’s milk if possible for Mediterranean flavor)

Mix-ins

  • ¼ cup dried cranberries, reduced-sugar or unsweetened (chopped)

  • ¼ cup finely chopped cucumbers (seeded)

  • ¼ cup chopped fresh spinach or arugula

  • 2 tbsp finely chopped red onion

  • 2 tbsp chopped fresh herbs: parsley, dill, or mint

  • 1 tbsp olive oil (Mediterranean richness)

  • 1 tsp lemon zest

  • 1½ tsp lemon juice

  • Salt & pepper to taste

Mediterranean note: Lemon, olive oil, and fresh herbs bring the classic Greek flavor profile.


Instructions

1. Prepare the Creamy Mixture

  1. In a bowl, mix cream cheese and feta until smooth.

  2. Add olive oil, lemon zest, lemon juice, herbs, and a pinch of salt + pepper.

  3. Fold in cranberries, cucumber, spinach/arugula, and red onion.

  4. Mix gently until evenly combined.


2. Assemble the Pinwheels

  1. Lay one low-carb tortilla on a flat surface.

  2. Spread a generous layer of the filling across the entire surface.

  3. Roll tightly into a log.

  4. Repeat with remaining tortillas.

  5. Wrap each roll in plastic wrap and refrigerate at least 20–30 minutes to firm.

Low-carb tip: For lettuce wraps, use large flat leaves, pat dry, and roll burrito-style.


3. Slice

  • Remove wraps from the fridge.

  • Slice into 1-inch pinwheels using a sharp knife.


4. Serve

Arrange on a platter with:

  • Fresh herbs

  • Lemon wedges

  • Olives

  • Cucumber slices

  • Cherry tomatoes

Drizzle a tiny bit of olive oil over the top if desired.


Optional Mediterranean Add-Ons

  • Add 2 tbsp chopped Kalamata olives to the filling.

  • Stir in 1–2 tbsp finely chopped sun-dried tomatoes.

  • Add ½ tsp dried oregano or za’atar for deeper Mediterranean flavor.

  • Mix in a dash of garlic powder or fresh minced garlic.


Make It Keto

Swap cranberries for:

  • 1 tbsp chopped pistachios

  • 1 tbsp chopped pecans

  • 1–2 tbsp finely diced roasted red peppers

(Still keeps the Mediterranean tang.)


Storage

  • Pinwheels keep 2–3 days in the fridge.

  • Best served chilled or slightly cool.
