¼ cup finely chopped cucumbers (seeded)

¼ cup chopped fresh spinach or arugula

2 tbsp finely chopped red onion

2 tbsp chopped fresh herbs: parsley, dill, or mint

1 tbsp olive oil (Mediterranean richness)

1 tsp lemon zest

1½ tsp lemon juice

Instructions
1. Prepare the Creamy Mixture

In a bowl, mix cream cheese and feta until smooth.

Add olive oil, lemon zest, lemon juice, herbs, and a pinch of salt + pepper.

Fold in cranberries, cucumber, spinach/arugula, and red onion.

2. Assemble the Pinwheels

Lay one low-carb tortilla on a flat surface.

Spread a generous layer of the filling across the entire surface.

Repeat with remaining tortillas.
