🍎 Mediterranean Cocoa Apple Bake (No Sugar!)
Ingredients
- 
4 medium sweet apples (Fuji, Honeycrisp, or Gala), peeled, cored, and chopped 
- 
4 large eggs 
- 
2 tablespoons unsweetened cocoa powder 
- 
½ teaspoon ground cinnamon (optional, but very Mediterranean) 
- 
A pinch of sea salt (enhances sweetness naturally) 
- 
Optional: 1 teaspoon vanilla extract or grated orange zest for extra aroma 
Instructions
- 
Preheat oven: 
 Preheat to 350°F (175°C). Lightly grease a small baking dish (or line with parchment).
- 
Cook the apples: 
 In a small saucepan, cook the chopped apples over medium heat for about 10 minutes, stirring occasionally, until soft and slightly caramelized. You can add a splash of water if they start to stick.
- 
Blend the mixture: 
 Add the cooked apples to a blender or food processor. Add eggs, cocoa powder, cinnamon, salt, and optional vanilla or orange zest. Blend until smooth and creamy.
- 
Bake: 
 Pour the mixture into the prepared baking dish.
 Bake for 30–35 minutes, until set in the center and slightly puffed.
- 
Cool and serve: 
 Let it cool for 10–15 minutes before slicing. It can be enjoyed warm or chilled — both are delicious!
Serving Ideas (Mediterranean Style)
- 
Top with a few crushed walnuts or almonds. 
- 
Add a spoon of Greek yogurt on the side. 
- 
Sprinkle with unsweetened cocoa nibs or fresh berries for antioxidants.
