🥐 Mediterranean Spinach & Feta Puff Pastries

Ingredients:

  • 1 sheet puff pastry (store-bought or homemade), thawed

  • 2 cups fresh spinach (or frozen, thawed and squeezed dry)

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup ricotta or cream cheese (optional, for creaminess)

  • 1 egg (for filling)

  • 1 egg (for egg wash)

  • Salt and pepper to taste

  • 1 teaspoon dried oregano (optional)

  • Sesame seeds or nigella seeds for topping (optional)


Instructions:

  1. Prepare the filling:

    • Heat olive oil in a pan over medium heat.

    • Sauté onion until soft and translucent.

    • Add garlic and spinach, cook until spinach is wilted (or warmed through if using frozen).

    • Season with salt, pepper, and oregano.

    • Let cool slightly, then stir in feta, ricotta (if using), and one beaten egg. Mix well.

  2. Prepare the pastry:

    • Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.

    • Roll out the puff pastry sheet on a lightly floured surface.

    • Spread the spinach-feta mixture evenly over half the pastry sheet, as shown in the image.

    • Fold the other half of the pastry over the filling and gently press down.

  3. Cut and shape:

    • Cut into triangles or squares using a sharp knife or pizza cutter.

    • Transfer to the prepared baking tray.

  4. Finish and bake:

    • Brush the tops with beaten egg.

    • Sprinkle with sesame or nigella seeds if desired.

    • Bake for 20–25 minutes, or until golden brown and puffed.

  5. Serve:

    • Let cool for a few minutes before serving.

    • Great warm or at room temperature!


🍽️ Tips:

  • You can add chopped sun-dried tomatoes, olives, or fresh herbs like dill or parsley for extra Mediterranean flavor.

  • These pastries freeze well — bake them from frozen for an easy snack.
