🥐 Mediterranean Spinach & Feta Puff Pastries
Ingredients:

1 sheet puff pastry (store-bought or homemade), thawed

2 cups fresh spinach (or frozen, thawed and squeezed dry)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced
-
1/2 cup feta cheese, crumbled
-
1/4 cup ricotta or cream cheese (optional, for creaminess)

1 egg (for filling)
-
1 egg (for egg wash)

Salt and pepper to taste

1 teaspoon dried oregano (optional)

Sesame seeds or nigella seeds for topping (optional)
Instructions:

Prepare the filling:

Heat olive oil in a pan over medium heat.

Sauté onion until soft and translucent.

Add garlic and spinach, cook until spinach is wilted (or warmed through if using frozen).

Season with salt, pepper, and oregano.

Let cool slightly, then stir in feta, ricotta (if using), and one beaten egg. Mix well.

Prepare the pastry:

Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.

Roll out the puff pastry sheet on a lightly floured surface.

Spread the spinach-feta mixture evenly over half the pastry sheet, as shown in the image.

Fold the other half of the pastry over the filling and gently press down.

Cut and shape:

Cut into triangles or squares using a sharp knife or pizza cutter.

Transfer to the prepared baking tray.

Finish and bake:

Brush the tops with beaten egg.

Sprinkle with sesame or nigella seeds if desired.

Bake for 20–25 minutes, or until golden brown and puffed.

Let cool for a few minutes before serving.
