🥬 Mediterranean Spinach & Feta Puff Pastry Squares

Ingredients

For the Filling

  • 400–500g fresh spinach (or 300g frozen spinach, thawed & squeezed dry)

  • 1 tbsp olive oil

  • 1 medium onion, finely diced

  • 2–3 garlic cloves, minced

  • 150–200g feta cheese, crumbled

  • 100g ricotta or cottage cheese (optional for creaminess)

  • 1 egg

  • Salt & black pepper to taste

  • ½ tsp dried oregano

  • ½ tsp dried dill (optional)

For the Pastry

  • 2 sheets puff pastry (thawed)

  • 1 egg (for egg wash)

  • Sesame seeds for topping


🍳 Instructions

1. Prepare the Spinach

If using fresh:

  • Sauté spinach in a pan for 2–3 min until wilted.

  • Transfer to a sieve and squeeze out excess moisture. Chop roughly.

If using frozen:

  • Thaw completely and squeeze out all water.


2. Cook the Aromatics

  1. In a pan, heat olive oil.

  2. Add onion and sauté until soft and lightly golden.

  3. Add garlic and cook for 30 seconds.


3. Make the Filling

In a bowl, combine:

  • Cooked spinach

  • Sautéed onion & garlic

  • Crumbled feta

  • Ricotta (optional)

  • 1 egg

  • Salt, pepper, oregano, dill

Mix well until creamy and evenly combined.


4. Assemble the Pastry Pie

  1. Place the first sheet of puff pastry on a baking tray lined with parchment.

  2. Spread the spinach-feta mixture evenly across the pastry, leaving 1 cm border.

  3. Place the second sheet of pastry on top.

  4. Seal the edges by pressing with a fork.

  5. Lightly score the top into squares (as in your photo).

  6. Brush with egg wash.

  7. Sprinkle sesame seeds generously.


5. Bake

Bake in a preheated oven at 400°F (200°C) for 25–30 minutes
until golden, puffed, and crispy.


🧀 Serve

Serve warm with:

  • Greek yogurt

  • Tzatziki

  • A fresh salad

  • Olives & tomatoes

These keep well and taste great at room temperature too!


🌿 Mediterranean Variations

  • Add chopped dill or parsley to the filling

  • Add a pinch of nutmeg for extra aroma

  • Mix in chopped olives or sun-dried tomatoes

  • Replace feta with goat cheese for a creamier flavor
