🥬 Mediterranean Spinach & Feta Puff Pastry Squares

⭐ Ingredients
For the Filling

400–500g fresh spinach (or 300g frozen spinach, thawed & squeezed dry)

1 tbsp olive oil
-
1 medium onion, finely diced
-
2–3 garlic cloves, minced
-
150–200g feta cheese, crumbled
-
100g ricotta or cottage cheese (optional for creaminess)
-
1 egg
-
Salt & black pepper to taste
-
½ tsp dried oregano
-
½ tsp dried dill (optional)
For the Pastry
-
2 sheets puff pastry (thawed)
-
1 egg (for egg wash)
-
Sesame seeds for topping
🍳 Instructions
1. Prepare the Spinach
If using fresh:

Sauté spinach in a pan for 2–3 min until wilted.

Transfer to a sieve and squeeze out excess moisture. Chop roughly.
If using frozen:
-
Thaw completely and squeeze out all water.
2. Cook the Aromatics

In a pan, heat olive oil.

Add onion and sauté until soft and lightly golden.
-
Add garlic and cook for 30 seconds.
3. Make the Filling
In a bowl, combine:

Cooked spinach
-
Sautéed onion & garlic
-
Crumbled feta
-
Ricotta (optional)
-
1 egg
-
Salt, pepper, oregano, dill
Mix well until creamy and evenly combined.
4. Assemble the Pastry Pie

Place the first sheet of puff pastry on a baking tray lined with parchment.

Spread the spinach-feta mixture evenly across the pastry, leaving 1 cm border.

Place the second sheet of pastry on top.

Seal the edges by pressing with a fork.

Lightly score the top into squares (as in your photo).

Brush with egg wash.

Sprinkle sesame seeds generously.
5. Bake
Bake in a preheated oven at 400°F (200°C) for 25–30 minutes
until golden, puffed, and crispy.
