Brownie Layer

  • ¾ cup unsalted butter, melted

  • 1½ cups granulated sugar

  • ¾ cup cocoa powder

Cookie Dough Layer (Egg-Free)

  • ¾ cup unsalted butter, softened

  • ¾ cup brown sugar

  • ¼ cup granulated sugar

  • 2 tbsp milk

  • 1 tsp vanilla extract

  • 1¾ cups all-purpose flour, heat-treated

  • ½ tsp salt

  • ¾ cup mini chocolate chips

  • ½ cup heavy cream


🔥 Instructions

1. Bake the brownie layer

  • Preheat oven to 350°F (175°C).

  • Line a 9-inch springform or round cake pan with parchment.

  • Whisk butter, sugar, and cocoa until smooth.

  • Add eggs and vanilla.

  • Stir in flour and salt.

  • Pour batter into pan.

  • Bake 30–35 minutes until set but fudgy.

  • Cool completely.


2. Make the cookie dough

  • Beat butter and sugars until fluffy.

  • Mix in milk and vanilla.

  • Add heat-treated flour and salt.

  • Fold in chocolate chips.

  • Press dough evenly over cooled brownie layer.


3. Add ganache

  • Heat cream until just simmering.

  • Pour over chocolate chips.

  • Pour over cookie dough layer.


4. Chill & serve

  • Refrigerate 1–2 hours until firm.
