12 oz spaghetti (whole wheat or regular)

2 tbsp extra virgin olive oil

1 lb chicken breast, thinly sliced

1 can (14–15 oz) crushed tomatoes

3 cups fresh spinach

2 tbsp fresh parsley or basil, chopped

Instructions

Cook the pasta
Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve ½ cup pasta water, then drain. -
Cook the chicken
Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until lightly golden and cooked through. Remove and set aside. -
Build the sauce
In the same skillet, add onion and sauté until soft. Stir in garlic and cook for 30 seconds until fragrant. -
Simmer the tomatoes
Add crushed tomatoes, oregano, basil, chili flakes, salt, and pepper. Simmer for 8–10 minutes until slightly thickened. -
Add spinach & chicken
Stir in spinach and let it wilt. Return chicken to the skillet and gently combine. -
Toss with spaghetti
Add cooked spaghetti and a splash of reserved pasta water. Toss until coated and glossy. -
Finish & serve
Remove from heat, drizzle with olive oil, sprinkle with fresh herbs and Parmesan if using.
