Grilled Garlic Herb Lamb Chops

Honestly, these are the best grilled lamb chops you’ll ever make! Marinated in garlic, herbs, and olive oil, they are incredibly tender and perfect for a quick dinner.

Introduction

Hi everyone! For the longest time, I was totally intimidated by cooking lamb at home. I used to think it was a “restaurant-only” meal that required hours of prep and some secret chef skills. But honestly? Lamb chops are actually one of the easiest and fastest proteins you can cook.

I usually whip these up on a weeknight when I want something that feels fancy but takes zero effort. Just take a look at WhatsApp Image 2026-08-04 at 5.15.00 PM.jpeg—those beautiful grill marks and that juicy caramelization are exactly what we’re going for! Whether you are firing up the outdoor grill for a weekend BBQ or using a cast-iron grill pan indoors, this garlic and herb marinade guarantees fall-off-the-bone flavor every single time.

Ingredients You’ll Need

  • 8-10 Lamb Chops (Rib or Loin): Rib chops are my personal favorite because they are so tender and look great on the plate.

  • 1/4 cup Extra Virgin Olive Oil: Helps the marinade stick and encourages those beautiful grill marks.

  • 4 cloves Garlic, minced: I usually measure garlic with my heart, so add more if you’re a fan!

  • 2 tbsp Fresh Rosemary & Thyme, finely chopped: Fresh herbs are highly recommended, but 1 tbsp of dried herbs works in a pinch.

  • 1 tbsp Fresh Lemon Juice: The acidity tenderizes the meat and cuts through the richness.

  • 1 tsp Kosher Salt & 1/2 tsp Black Pepper: Essential for a good crust.

Step-by-Step Method

  1. Mix the Marinade: In a small bowl, whisk together the olive oil, minced garlic, chopped herbs, lemon juice, salt, and pepper.

  2. Coat the Chops: Place the lamb chops in a large ziplock bag or a shallow dish. Pour the marinade over them, making sure every chop is well-coated. Let them marinate at room temperature for 30 minutes. (If prepping ahead, put them in the fridge for up to 4 hours, but let them sit on the counter for 30 mins before grilling).

  3. Preheat the Grill: Heat your grill or indoor grill pan to medium-high heat. You want it nice and hot for a good sear.

  4. Grill to Perfection: Place the lamb chops on the hot grill. Cook for about 3 to 4 minutes per side for medium-rare, or 4 to 5 minutes for medium.

  5. Rest!: This is the most important step. Transfer the chops to a plate, cover loosely with foil, and let them rest for 5 minutes before serving so the juices redistribute.
