Ingredients:
- Keto ranch dressing 1 cup
- Keto-friendly taco seasoning 2 tbsp.
- Cooked chicken breast 3 cups
- Diced tomatoes 1 cup
- Sliced cucumber 1 cup
- cooked and cooled cauliflower florets 1 cup
- Sliced green onions 1 cup
- Black soy beans 1 can
- Full-fat cheese 4 oz
- Fresh chopped cilantro 1/4 cup
- Lime juice 1/2 cup
- Crushed pork rinds or almond flour-based keto-friendly tortilla chips 1/2 chips
For toppings: (optional):
- Diced jalapeño
- Toasted pumpkin seeds
- Sliced avocado
Instructions:
- Take a small bowl, take keto friendly taco seasoning and ranch dressing and mix them altogether.
- Put the mixture in the refrigerator till it gets ready for use.
- Add soybeans, cubed cheese, chopped cilantro, sliced green onions, cooked cauliflower florets, diced cucumber, tomatoes, chopped lettuce, and diced chicken in another bowl and mix them until well combined.
- Add lemon juice on the dressing ingredients.
- Now add pork rinds or tortilla chips in it.
- Now add the ranch and taco dressing gradually over the salad.
- Now add salt and pepper to the required taste.
- Garnish it with sliced avocado, jalapeño and toasted pumpkin seeds. (optional).
- Tex-Mex Chopped Chicken Salad is now ready to be served.
