Ingredients:
- 1 lb shrimp (peeled and deveined)
- 2 tbsp olive oil
- 1 tbsp taco seasoning
- 1 cup shredded lettuce
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup red onion (finely chopped)
- 1/4 cup cilantro (chopped)
- 1 avocado (diced)
- 1 lime (cut into wedges)
- Salt and pepper to taste
- 1/4 cup sour cream (optional)
- 1/4 cup shredded cheese (optional)
Instructions:
- Prepare the Shrimp:
- In a bowl, toss the shrimp with olive oil and taco seasoning until well coated.
- Heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
- Prepare the Lettuce Boats:
- Carefully separate the lettuce leaves and use them as “boats” for the filling.
- Assemble the Boats:
- Place a few shrimp in each lettuce leaf.
- Top with shredded lettuce, cherry tomatoes, red onion, cilantro, and avocado.
- If desired, add a dollop of sour cream and a sprinkle of shredded cheese.
- Serve:
- Squeeze lime wedges over the boats for added flavor.
- Serve immediately and enjoy!
