Instructions:
Cook the Orzo: Begin by cooking the orzo according to the package directions (about 8-10 minutes).
Drain and set aside.
Prepare the Mushrooms and Onions for Air Frying: In a bowl,
toss the sliced mushrooms and chopped onion with olive oil, salt, pepper,
and a pinch of red pepper flakes (if desired).
Air Fry the Mushrooms and Onions:
Preheat the air fryer to 375°F (190°C).
Spread the mushrooms and onions in a single layer in the air fryer basket.
Air fry for about 8-10 minutes, shaking halfway through, until they’re golden and tender.
Wilt the Spinach: While the mushrooms and onions are cooking, heat a small pan over medium heat.
Add a touch of olive oil and sauté the spinach for 2-3 minutes until it wilts down.
Combine Everything: Once the mushrooms and onions are ready, transfer them to a large bowl.
Add the cooked orzo and wilted spinach.
Stir everything together and adjust the seasoning with salt, pepper, and red pepper flakes to taste.
Finish with Parmesan (Optional):
If you like, sprinkle in some Parmesan cheese for extra flavor and a creamy texture.
