🧀 Crispy Parmesan Zucchini Rounds (Mediterranean Style)

🥗 Ingredients

  • 2 medium zucchinis, sliced into ¼-inch thick rounds

  • 2 tbsp extra-virgin olive oil

  • ½ cup grated Parmesan cheese

  • ½ tsp garlic powder

  • ½ tsp dried oregano

  • ½ tsp dried thyme (or za’atar for a Mediterranean twist)

  • Salt and freshly ground black pepper, to taste

  • Optional garnish: chopped fresh parsley, a squeeze of lemon, or a sprinkle of feta


👩‍🍳 Instructions

  1. Preheat oven or air fryer

    • Oven: Preheat to 425°F (220°C).

    • Air fryer: Preheat to 400°F (200°C).

  2. Prepare the zucchini

    • Wash and slice zucchini into ¼-inch thick rounds.

    • Pat them dry with a paper towel (this helps them crisp up).

  3. Season

    • In a bowl, toss zucchini slices with olive oil, garlic powder, oregano, thyme, salt, and pepper.

  4. Coat with Parmesan

    • Arrange the zucchini rounds in a single layer on a parchment-lined baking sheet (or air fryer basket).

    • Sprinkle the Parmesan cheese evenly over the tops of the rounds.

  5. Bake or Air Fry

    • Oven: Bake for 15–20 minutes, or until golden and crisp on the edges.

    • Air fryer: Cook for 8–10 minutes, shaking halfway through.

  6. Garnish & Serve

    • Remove and let cool slightly.

    • Garnish with fresh parsley, a squeeze of lemon juice, or a little crumbled feta for Mediterranean flair.
