🍌 Mediterranean Banana Oat Mug Dessert (No Sugar, No Flour, No Gluten)

🌿 Ingredients

  • 4 ripe bananas, mashed (the riper, the sweeter)

  • 1 egg (for binding and richness)

  • ⅓ cup (80 ml) milk — any type (almond, oat, or dairy)

  • 1 cup (100 g) oats — rolled or quick oats

  • ½ tsp ground cinnamon

  • 1 tsp vanilla extract (optional but adds aroma)

  • Pinch of sea salt

  • Olive oil or butter — a few drops to grease the mug


🫶 Optional Mediterranean Add-ins

  • 1 tbsp crushed walnuts or pistachios

  • 1 tbsp raisins or chopped dates (natural sweetness)

  • A few chopped figs or apricots for a true Mediterranean vibe

  • A small drizzle of honey on top if you allow natural sweeteners (optional)


👩‍🍳 Instructions

1. Mash and Mix

  1. In a bowl, mash the bananas until smooth.

  2. Whisk in the egg, milk, vanilla, cinnamon, and salt.

  3. Stir in the oats (and any optional nuts or fruit).

  4. Let the mixture rest for 5 minutes so the oats can soak and thicken slightly.

2. Prepare the Mug

  • Lightly grease a microwave-safe mug (or ramekin) with olive oil or butter.

  • Fill the mug about ¾ full with the banana-oat mixture (it will rise slightly).

3. Cook

  • Microwave method: Heat on high for 2–3 minutes, or until the top is set and springy.

  • Oven method: Bake at 350°F (175°C) for 20–25 minutes until golden and firm.

4. Serve

  • Let cool for 1–2 minutes.

  • Top with a spoonful of Greek yogurt, a sprinkle of crushed nuts, or a few fresh berries.

  • Optional: drizzle a little warm olive oil or tahini for extra Mediterranean richness.
