🥬 Mediterranean Roasted Cabbage Steaks

Ingredients:

  • 1 medium head of cabbage

  • 50 ml olive oil

  • 1 tsp salt (or to taste)

  • Ground black pepper (to taste)

  • Red pepper flakes or chopped chili (to taste)

  • 1 tsp paprika (optional, for color)

  • 1 clove garlic (minced, optional)

  • 100 g grated cheese (like mozzarella or Parmesan)


Instructions:

  1. Preheat the oven:
    Set it to 200°C (400°F).

  2. Prepare the cabbage:

    • Remove any wilted outer leaves.

    • Slice the cabbage into thick rounds (about 2–3 cm each), keeping the core to hold them together.

    • Place the slices on a baking tray lined with parchment paper.

  3. Make the olive oil mixture:
    In a small bowl, mix olive oil, salt, black pepper, paprika, and garlic (if using).

  4. Brush the cabbage:

    • Generously brush both sides of each cabbage slice with the olive oil mixture.

  5. Bake the cabbage:

    • Roast in the oven for 20–25 minutes, until the edges start to brown.

  6. Add toppings:

    • Sprinkle grated cheese and chopped red pepper over each cabbage slice.

    • Return to the oven for another 10 minutes, until the cheese is melted and golden.

  7. Serve:

    • Drizzle with a bit more olive oil or a squeeze of lemon juice.

    • Optionally, garnish with fresh herbs (like parsley or oregano).
