INGREDIENTS

1. Chicken Souvlaki

  • 2 lbs (900g) boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

  • Marinade:

    • ¼ cup extra-virgin olive oil

    • 3 tbsp lemon juice (fresh)

    • 2 garlic cloves, minced

    • 1 tbsp red wine vinegar

    • 1 tsp dried oregano (Greek oregano preferred)

    • 1 tsp dried thyme

    • ½ tsp paprika

    • ½ tsp sea salt

    • ¼ tsp black pepper

2. Whipped Feta Dip

  • 8 oz (225g) feta cheese (preferably Greek, sheep’s milk)

  • ½ cup Greek yogurt

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 small garlic clove, minced

  • 1–2 tbsp honey (optional but gives a beautiful Mediterranean balance)

  • Pinch of black pepper

  • Optional: 1–2 tbsp roasted red peppers for color or heat

3. Grazing Board Additions (Pick & Choose)

Vegetables

  • Cherry tomatoes

  • Sliced cucumbers

  • Mini bell peppers or roasted red peppers

  • Red onion slices

  • Kalamata olives

  • Pepperoncini (optional)

Carbs

  • Warm pita or pita chips

  • Grilled flatbread

  • Lemon-herb rice (optional)

Extras (Classic Greek Mezze)

  • Tzatziki

  • Hummus

  • Dolmades (stuffed grape leaves)

  • Fresh herbs: parsley, dill, mint

INSTRUCTIONS

1. Marinate the Chicken

  1. Add olive oil, lemon juice, garlic, vinegar, oregano, thyme, paprika, salt, and pepper to a bowl.

  2. Add chicken pieces and toss well.

  3. Cover and refrigerate at least 30 minutes, ideally 2–4 hours.

  4. Thread onto skewers before cooking.

Tip: For a classic Greek flavor, use plenty of lemon, oregano, and olive oil.


2. Cook the Souvlaki

Grill Method (Best Flavor):

  • Preheat grill to medium-high.

  • Grill skewers 10–12 minutes, rotating until golden and cooked through.

Stovetop Method:

  • Heat a grill pan or skillet with a little olive oil.

  • Cook skewers 10–12 minutes, turning regularly.


3. Make the Whipped Feta Dip

  1. Add feta, yogurt, olive oil, lemon juice, garlic, honey, and pepper to a food processor.

  2. Blend until smooth and creamy.

  3. Adjust: more yogurt for creaminess, more lemon for tang.

Optional: Add roasted red pepper for a smoky version.


4. Prepare the Grazing Board Components

  • Warm pita or flatbread

  • Slice the fresh veggies

  • Set out olives, peppers, tzatziki, and hummus

  • Add lemon wedges and herbs for freshness


5. Assemble the Grazing Board

  1. Place the Whipped Feta Dip in a bowl in the center.

  2. Add a bowl of tzatziki if using.

  3. Arrange the chicken souvlaki skewers on one side.

  4. Fill the board with:

    • Tomatoes

    • Cucumbers

    • Peppers

    • Red onions

    • Olives

    • Pita or flatbread slices

  5. Garnish with herbs and lemon for a vibrant, Mediterranean look.
