Ingredients:

1 cup Greek yogurt

1 clove garlic, minced or grated

1 tbsp lemon juice

2 tbsp finely chopped fresh dill or parsley

1 tbsp extra-virgin olive oil

ΒΌ tsp salt

Black pepper to taste
Mix all ingredients in a bowl, chill until serving.

1. Prepare the Potatoes

Grate potatoes using the large holes of a grater.

Place grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.

Add the grated onion and squeeze again.
This step is key for crispiness.
2. Make the Fritter Mixture

Transfer potatoes/onion to a bowl.

Add eggs, flour, salt, pepper, garlic powder, paprika, oregano, and parsley.

Mix until evenly combined.

Add optional ingredients (sun-dried tomato, feta, lemon zest) if desired.
3. Fry the Fritters

Heat a generous layer of olive oil in a skillet over medium-high heat.

Scoop ~2 tbsp of mixture per fritter and flatten gently in the pan.
