🍪 Easy Low-Carb Mediterranean Butter Cookies
(Almond-based, sugar-free, flour-free)
🛒 Ingredients (Makes 10–12 cookies)
Dry

1 ½ cups almond flour (Mediterranean staple)

¼ tsp baking powder (optional)

Pinch of sea salt
Wet

5 tbsp unsalted butter, melted

1 egg
-
1 tsp vanilla extract
-
Optional: 1–3 tbsp low-carb natural sweetener (stevia, monk fruit, or erythritol)
Mediterranean Flavor Options (choose any)

Zest of 1 lemon

¼ tsp cinnamon
-
1 tbsp sesame seeds (Greek/Turkish style)

1 tbsp chopped pistachios or almonds
🍳 Instructions
1. Preheat Oven
Set to 175°C (350°F).
2. Mix Dry Ingredients
In a bowl combine:

baking powder (optional)

sea salt
3. Mix Wet Ingredients
In another bowl whisk:

melted butter
-
egg
-
vanilla
-
sweetener (if using)
4. Combine
Add wet mixture to dry and stir until a soft dough forms.
If dough is too sticky → chill 10 minutes.
5. Shape Cookies

Roll into small balls

Place on baking tray

Press gently with your fingers or a fork

Add almond, sesame, or lemon zest on top (optional)
6. Bake
Bake 10–12 minutes until edges turn light golden.
Let cool completely (they firm up as they cool).
🌿 Tips & Variations
Mediterranean Pistachio Version
Add:

2 tbsp chopped pistachios

½ tsp orange zest
Tahini Butter Cookies (Greek-Lebanese Style)
Replace 2 tbsp of the butter with tahini.
Gives a nutty, authentic Mediterranean flavor.
Lemon–Olive Oil Cookie (Cretan Style)
Replace butter with olive oil and add lemon zest.
Keep almond flour for low-carb.
