Zesty Lime Shrimp & Avocado Salad (Mediterranean Style)
🥗 Ingredients (2–3 servings)
For the Shrimp

Shrimp – 300–350 g, peeled & deveined

Olive oil – 1 tbsp

Garlic – 2 cloves, minced

Paprika – ½ tsp
-
Salt & black pepper – to taste

Lime zest – ½ tsp
-
Lime juice – 1 tbsp
For the Salad
-
Avocado – 1 large, diced
-
Cherry tomatoes – 1 cup, halved
-
Cucumber – 1 medium, diced
-
Red onion – ¼ cup finely chopped
-
Fresh cilantro or parsley – 2–3 tbsp chopped
-
Mixed greens or romaine – 2 cups (optional)
For the Zesty Lime Dressing

Olive oil – 2 tbsp
-
Lime juice – 3 tbsp (fresh)
-
Honey – 1 tsp (optional)
-
Dijon mustard – ½ tsp
-
Garlic – 1 small clove, minced
-
Salt & pepper – to taste
-
Chili flakes – a pinch (optional)
👩🍳 Instructions
1. Cook the Shrimp

Heat olive oil in a pan over medium heat.

Add garlic and sauté for 20 seconds.

Add shrimp, paprika, lime zest, salt, and pepper.

Cook 2–3 minutes per side until pink and opaque.

Squeeze 1 tbsp lime juice on top and remove from heat.

Set aside to cool slightly.
2. Prepare the Salad
In a large bowl add:

Avocado
-
Cherry tomatoes
-
Cucumber
-
Red onion
-
Fresh cilantro/parsley
-
Mixed greens (if using)
3. Make the Dressing
Whisk together:

Olive oil
-
Lime juice
-
Dijon
-
Honey
-
Garlic
-
Salt, pepper, chili flakes
4. Assemble

Add cooked shrimp to the salad.

Pour the zesty lime dressing.

Toss gently (especially around the avocado).

Serve immediately for freshest flavor!
