Zesty Lime Shrimp & Avocado Salad (Mediterranean Style)

🥗 Ingredients (2–3 servings)

For the Shrimp

  • Shrimp – 300–350 g, peeled & deveined

  • Olive oil – 1 tbsp

  • Garlic – 2 cloves, minced

  • Paprika – ½ tsp

  • Salt & black pepper – to taste

  • Lime zest – ½ tsp

  • Lime juice – 1 tbsp

For the Salad

  • Avocado – 1 large, diced

  • Cherry tomatoes – 1 cup, halved

  • Cucumber – 1 medium, diced

  • Red onion – ¼ cup finely chopped

  • Fresh cilantro or parsley – 2–3 tbsp chopped

  • Mixed greens or romaine – 2 cups (optional)

For the Zesty Lime Dressing

  • Olive oil – 2 tbsp

  • Lime juice – 3 tbsp (fresh)

  • Honey – 1 tsp (optional)

  • Dijon mustard – ½ tsp

  • Garlic – 1 small clove, minced

  • Salt & pepper – to taste

  • Chili flakes – a pinch (optional)


👩‍🍳 Instructions

1. Cook the Shrimp

  1. Heat olive oil in a pan over medium heat.

  2. Add garlic and sauté for 20 seconds.

  3. Add shrimp, paprika, lime zest, salt, and pepper.

  4. Cook 2–3 minutes per side until pink and opaque.

  5. Squeeze 1 tbsp lime juice on top and remove from heat.

  6. Set aside to cool slightly.


2. Prepare the Salad

In a large bowl add:

  • Avocado

  • Cherry tomatoes

  • Cucumber

  • Red onion

  • Fresh cilantro/parsley

  • Mixed greens (if using)


3. Make the Dressing

Whisk together:

  • Olive oil

  • Lime juice

  • Dijon

  • Honey

  • Garlic

  • Salt, pepper, chili flakes


4. Assemble

  1. Add cooked shrimp to the salad.

  2. Pour the zesty lime dressing.

  3. Toss gently (especially around the avocado).

  4. Serve immediately for freshest flavor!
