Mediterranean Blueberry Breakfast Quesadilla

Crispy outside, creamy inside, flavored with honey, yogurt, and warm cinnamon.


🫐 Ingredients (1–2 servings)

For the Quesadilla

  • Whole-wheat tortilla – 1 large

  • Fresh or frozen blueberries – ½ cup

  • Greek yogurt – 3–4 tbsp

  • Cream cheese or ricotta – 2 tbsp (Mediterranean twist: use ricotta!)

  • Honey or maple syrup – 1–2 tsp

  • Cinnamon – ¼ tsp

  • Lemon zest – a pinch (optional but very Mediterranean)

  • Olive oil or butter – 1–2 tsp (for frying)

Optional Add-ins

  • Chopped walnuts or almonds – 1 tbsp

  • Chia seeds – 1 tsp

  • A drizzle of tahini (Mediterranean flavor boost!)


👩‍🍳 Instructions

1. Prepare the Filling

In a small bowl, mix:

  • Greek yogurt

  • Ricotta or cream cheese

  • Honey

  • Cinnamon

  • Lemon zest

  • Chia seeds or nuts (optional)


2. Assemble

  1. Lay tortilla flat.

  2. Spread the creamy yogurt mixture over half the tortilla.

  3. Add blueberries on top (fresh or frozen).

  4. Fold the tortilla in half to create a semicircle.


3. Cook

  1. Heat olive oil or butter in a pan over medium heat.

  2. Place the folded quesadilla in the pan.

  3. Cook 2–3 minutes per side until golden and crispy.

  4. Let rest 1 minute before cutting—it helps keep the filling inside.


4. Serve

Slice into wedges and drizzle with:

  • A little honey

  • Extra blueberries

  • A sprinkle of cinnamon
