Honeycrisp Apple Broccoli Salad (Mediterranean Style)

A vibrant salad with crisp apples, crunchy broccoli, dried fruit, nuts, and a light yogurt-honey dressing.


🥗 Ingredients (4 servings)

For the Salad

  • Fresh broccoli florets – 3 cups, chopped small

  • Honeycrisp apple – 1 large, diced

  • Red onion – ¼ small, finely chopped

  • Carrot – 1 medium, shredded (optional)

  • Dried cranberries or raisins – ⅓ cup

  • Toasted almonds, walnuts, or pistachios – ⅓ cup chopped

  • Feta cheese – ¼ cup crumbled (optional but Mediterranean)

  • Fresh parsley – 2 tbsp chopped

For the Mediterranean Yogurt-Honey Dressing

  • Greek yogurt – ½ cup

  • Olive oil – 1 tbsp

  • Honey – 1–2 tsp (adjust to sweetness of apple)

  • Lemon juice – 1–2 tbsp

  • Dijon mustard – ½ tsp

  • Salt – to taste

  • Black pepper – to taste


👩‍🍳 Instructions

1. Prep the Broccoli

  • Chop broccoli into very small bite-sized pieces.

  • If you prefer softer broccoli, blanch it:

    • Boil 1 minute → drain → rinse with cold water.

2. Assemble the Salad

In a large bowl, combine:

  • Broccoli

  • Diced Honeycrisp apple

  • Red onion

  • Carrot

  • Cranberries

  • Nuts

  • Feta (if using)

  • Parsley

3. Make the Dressing

Whisk together:

  • Greek yogurt

  • Olive oil

  • Honey

  • Lemon juice

  • Dijon

  • Salt & pepper

Taste and adjust (more honey for sweet, more lemon for tangy).

4. Combine

  • Pour dressing over the salad.

  • Toss gently to coat everything evenly.

  • Chill 20–30 minutes for best flavor.
