🍗 Low Carb Mediterranean Creamy Garlic Chicken

Keto-Friendly • One-Pan • High-Protein • Mediterranean Flavors


Ingredients

For the Chicken

  • 4 chicken breasts or 6 chicken thighs

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • 1 tbsp olive oil


For the Creamy Garlic Sauce

  • 1 tbsp olive oil

  • 1 tbsp butter (optional but adds richness)

  • 5–6 garlic cloves, minced

  • ½ cup chicken broth

  • ¾ cup heavy cream or coconut cream

  • ¼ cup grated Parmesan

  • ½ tsp dried oregano

  • ½ tsp dried thyme

  • ¼ tsp chili flakes (optional)

  • Juice of ½ lemon (Mediterranean brightness)

  • Salt & pepper to taste


Optional Mediterranean Add-Ins

  • ½ cup spinach

  • 6–8 sun-dried tomatoes

  • 8–10 olives

  • Fresh parsley or basil for topping


🥘 Instructions

1. Season & Sear the Chicken

  1. Season chicken with salt, pepper, and paprika.

  2. Heat olive oil in a large skillet.

  3. Sear chicken 4–5 minutes per side until golden.

  4. Remove and set aside (it will finish cooking in the sauce).


2. Make the Creamy Garlic Sauce

  1. In the same pan, add olive oil + butter.

  2. Add garlic and cook 30–40 seconds until fragrant.

  3. Pour in chicken broth and scrape browned bits.

  4. Add heavy cream, Parmesan, oregano, thyme, chili flakes.

  5. Stir and simmer 3–4 minutes until thickened.


3. Add Chicken Back

  1. Return chicken to the pan.

  2. Spoon sauce over it.

  3. Add lemon juice.

  4. Reduce heat and simmer 10 minutes until chicken is fully cooked and sauce is creamy.


4. Add Mediterranean Touches (Optional)

Stir in:

  • spinach (let it wilt)

  • sun-dried tomatoes

  • olives

Finish with parsley or basil on top.

💡 Tips for Extra Creaminess

✔ Add more Parmesan
✔ Simmer on low to thicken
✔ Don’t add lemon at the start — it curdles the cream
