🌿 Mediterranean Ham & Cheese Puff Pastry Pockets

✅ Ingredients (makes 8 pockets)

1 sheet puff pastry, thawed

150–200g sliced ham (turkey ham also works)

1 cup shredded cheese (mozzarella, cheddar, or a mix)

1–2 tbsp Dijon mustard (optional but very Mediterranean)

1 egg (for egg wash)
-
1 tbsp sesame seeds or nigella seeds (optional)
-
Fresh thyme or oregano (optional)
👩🍳 Instructions
1. Prepare the pastry

Lay the thawed puff pastry sheet on a floured surface.

Cut it into 8 equal rectangles.
2. Fill the pockets
On each rectangle:

Spread a small amount of Dijon mustard (optional).

Add a slice of ham (fold if needed).

Sprinkle shredded cheese generously.

Add a pinch of oregano or thyme.
3. Seal them

Fold each rectangle into a pocket (either square or triangle).

Press the edges with a fork to seal well so cheese doesn’t leak.
4. Brush & finish

Beat the egg and brush the tops of each pocket.

Sprinkle sesame seeds or nigella seeds.
-
Add a tiny pinch of herbs on top if you like.
5. Bake
Bake at 200°C (390°F) for 18–22 minutes, until:
