1 cup semolina (sooji) or fine cornmeal

Cheese Layer

1 cup shredded mozzarella

1 cup shredded cheddar

¼ cup grated Parmesan
Finishing

1 tbsp olive oil

1 tsp dried parsley or oregano

1. Prepare the Batter
In a large bowl, whisk together:
Greek yogurt, eggs, milk, olive oil, salt, pepper, garlic powder, and paprika.
2. Add Dry Ingredients
Mix in the semolina and baking powder until combined.
Fold in the corn kernels.
3. Add the Cheese
Mix in:

All the Parmesan
(Reserve the remaining cheese for the topping.)
4. Assemble
Pour batter into a greased 9-inch baking dish.
Top with the remaining mozzarella + cheddar.
5. Bake
Bake at 180°C (350°F) for 30–40 minutes,
until golden, bubbling, and set in the center.
6. Rest & Slice
Let it cool 10 minutes so it slices cleanly.
Sprinkle parsley or oregano on top.
