For the Muffins

½ cup olive oil (or melted butter)

½ cup Greek yogurt

½ cup sugar

2 large eggs

1 tsp vanilla extract

½ cup milk (any)
Cinnamon Sugar Coating

½ cup sugar
-
1 tbsp cinnamon
-
4 tbsp melted butter (or warm olive oil)
🔪 Instructions
1. Preheat

Preheat oven to 180°C / 350°F.

Grease a muffin tin (or use liners).
2. Mix Dry Ingredients
In a bowl, whisk:

salt

cinnamon
3. Mix Wet Ingredients
In another bowl, whisk:

olive oil
-
sugar
-
eggs
-
vanilla
-
Greek yogurt
-
milk
4. Combine

Add dry ingredients into wet.

Stir gently—don’t overmix.
5. Fill & Bake

Fill each muffin cup ¾ full.

Bake 15–18 minutes, until golden.
6. Coat in Cinnamon Sugar

Mix sugar + cinnamon in a small bowl.

Brush muffins with melted butter.

Roll or sprinkle with cinnamon sugar.
