Mediterranean Cinnamon Sugar Muffins

🧁 Mediterranean Cinnamon Sugar Muffins (Churro-Style)

Light, fluffy, and coated in a spiced cinnamon sugar crust.


🛒 Ingredients (Makes 12)

For the Muffins

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • ½ cup olive oil (or melted butter)

  • ½ cup Greek yogurt

  • ½ cup sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup milk (any)

Cinnamon Sugar Coating

  • ½ cup sugar

  • 1 tbsp cinnamon

  • 4 tbsp melted butter (or warm olive oil)


🔪 Instructions

1. Preheat

  • Preheat oven to 180°C / 350°F.

  • Grease a muffin tin (or use liners).

2. Mix Dry Ingredients

In a bowl, whisk:

  • flour

  • baking powder

  • baking soda

  • salt

  • cinnamon

3. Mix Wet Ingredients

In another bowl, whisk:

  • olive oil

  • sugar

  • eggs

  • vanilla

  • Greek yogurt

  • milk

4. Combine

  • Add dry ingredients into wet.

  • Stir gently—don’t overmix.

5. Fill & Bake

  • Fill each muffin cup ¾ full.

  • Bake 15–18 minutes, until golden.

6. Coat in Cinnamon Sugar

  • Mix sugar + cinnamon in a small bowl.

  • Brush muffins with melted butter.

  • Roll or sprinkle with cinnamon sugar.


✨ Optional Mediterranean Twists

Try adding:

  • A pinch of cardamom

  • Orange zest

  • Honey drizzle on top

  • Swap cinnamon sugar for sesame + cinnamon
