🌮 Vegan Nachos Recipe (Mediterranean-Inspired)

🥗 Ingredients

For the Nachos

  • 1 large bag tortilla chips (or baked pita chips for a Mediterranean twist)

  • 1 cup cooked black beans or chickpeas

  • 1 cup corn kernels

  • 1 cup diced tomatoes

  • 1 cup diced cucumber (optional, Mediterranean vibe)

  • 1 small red onion, finely chopped

  • 1–2 avocados, chopped or mashed

  • ½ cup kalamata olives, sliced

  • ½ cup vegan feta or crumbled tofu feta

  • ¼ cup fresh parsley or cilantro, chopped

  • 1–2 jalapeños, sliced (optional)

For the Vegan “Cheese” Sauce

  • 1 cup raw cashews, soaked 15–20 mins in hot water

  • ¼ cup nutritional yeast

  • 1 clove garlic

  • 1 tsp turmeric (color)

  • 1 tsp smoked paprika

  • ½ tsp salt

  • Juice of ½ lemon

  • ¾ cup warm water (add more if needed)

Optional Toppings

  • Salsa

  • Hummus dollop

  • Tahini drizzle

  • Green onions

  • Lime wedges


👩‍🍳 Instructions

1️⃣ Make the Vegan Cheese Sauce

  1. Drain soaked cashews.

  2. Blend cashews + nutritional yeast + garlic + lemon + paprika + turmeric + salt + warm water.

  3. Blend until ultra-smooth and creamy.

  4. Adjust thickness with extra water if needed.

2️⃣ Prepare the Nacho Base

  1. Preheat oven to 180°C (350°F).

  2. Spread tortilla chips (or pita chips) on a baking tray.

  3. Sprinkle beans, corn, and a little vegan feta.

3️⃣ Warm It

  • Bake 8–10 minutes just to heat the toppings (don’t burn the chips!).

4️⃣ Add Fresh Toppings

Remove from oven and add:

  • Tomatoes

  • Onion

  • Olives

  • Avocado

  • Cucumber

  • Jalapeños

  • Fresh parsley

5️⃣ Drizzle & Serve

  • Pour over the vegan cheese sauce.

  • Add salsa, hummus, or tahini if desired.

  • Serve immediately — warm, cheesy, crunchy, perfect! 😍
