🍋✨ Easy Lemon 7UP Cake (Mediterranean Style)

Soft, moist, lemony, and ultra-simple—no mixer needed!

📝 Ingredients

For the Cake

  • 1 box lemon cake mix (or vanilla if you prefer less lemon)

  • 1 cup 7UP (not diet)

  • 3 large eggs

  • ⅓ cup extra-virgin olive oil (Mediterranean twist—makes it moist & fragrant)

  • 1 tbsp lemon zest

  • 1 tsp vanilla (optional)

For the Lemon Glaze

  • 1 cup powdered sugar

  • 2–3 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • Optional: 1–2 tsp 7UP for extra shine


👩‍🍳 Instructions

1. Prepare the Cake

  1. Preheat oven to 350°F (175°C).

  2. Grease a bundt pan or 9×13 baking dish.

  3. In a bowl, mix together:

    • cake mix

    • eggs

    • olive oil

    • 7UP

    • lemon zest

    • vanilla (optional)

  4. Whisk until smooth (do NOT overmix).

  5. Pour batter into your prepared pan.

2. Bake

  • Bake 40–45 minutes (bundt) or 28–32 minutes (9×13).

  • Cake is done when a toothpick comes out clean.

3. Make the Glaze

Whisk together powdered sugar, lemon juice, zest, and optional 7UP until silky.

4. Finish

  • Let cake cool 10 minutes.

  • Drizzle glaze over warm cake so it absorbs beautifully.
