🌿 Loaded Mediterranean Hummus Platter

A fresh, vibrant, and delicious Mediterranean-style appetizer topped with veggies, olives, feta, herbs, and olive oil. Perfect with pita, chips, or veggies!

🧈 Ingredients

For the Hummus (or use store-bought):

  • 1 can (15 oz) chickpeas, drained & rinsed
  • 3 tbsp tahini
  • 2–3 tbsp lemon juice
  • 1–2 garlic cloves
  • 3 tbsp olive oil
  • 3–5 tbsp cold water
  • Salt to taste
  • Optional: pinch of cumin

Toppings (as shown in the image):

  • Sliced cucumbers
  • Cherry tomatoes (red & yellow), halved
  • Kalamata olives
  • Crumbled feta cheese
  • Sliced red onion
  • Fresh parsley, chopped
  • Olive oil (generous drizzle)
  • Paprika or smoked paprika

🥣 Instructions

1. Make the Hummus

  • Add chickpeas, tahini, lemon juice, garlic, olive oil, and salt to a food processor.
  • Blend until smooth.
  • Add cold water, 1 tbsp at a time, until creamy and fluffy.
  • Taste and adjust lemon, garlic, or salt.

2. Assemble the Platter

  • Spread the hummus onto a large plate or shallow bowl, creating swirls with the back of a spoon.
  • Drizzle generously with olive oil.
  • Sprinkle paprika over the hummus.
  • Arrange toppings in rows or sections:
  • Cucumbers
  • Tomatoes
  • Olives
  • Red onion
  • Feta
  • Finish with chopped parsley all over.

3. Serve With

  • Warm pita bread
  • Pita chips
  • Fresh vegetables
  • Crackers
