🧁 Cottage Cheese Banana Oat Protein Pancake Bites
Fluffy mini pancake bites made with wholesome Mediterranean ingredients — oats, banana, cottage cheese, olive oil, and warm spices.
🛒 Ingredients (Makes 24 mini bites)
Wet ingredients

1 cup cottage cheese

2 ripe bananas

2 eggs

1 tsp vanilla extract

1 tbsp olive oil (Mediterranean twist)
Dry ingredients

1 cup rolled oats
-
1 scoop (25g) vanilla protein powder (optional but recommended)

1 tsp baking powder

½ tsp cinnamon

Pinch of salt
Optional add-ins

Mini dark chocolate chips

Blueberries

Chopped walnuts or almonds

Shredded coconut
🍽️ Instructions
1. Blend the batter

Add cottage cheese, bananas, eggs, vanilla, and olive oil to a blender.

Add oats, protein powder, baking powder, cinnamon, and salt.

Blend until smooth and creamy.
2. Prepare the pan

Preheat oven to 350°F (175°C).

Grease a mini muffin tin with olive oil or line with silicone cups.
3. Fill & bake

Fill each muffin cup ¾ full.

Add your optional toppings (chocolate chips, blueberries, nuts, etc.).

Bake for 12–15 minutes, until set and lightly golden.
4. Cool and enjoy
Let them cool 5 minutes before removing.
They stay soft, fluffy, and delicious!
