🧁 Cottage Cheese Banana Oat Protein Pancake Bites

Fluffy mini pancake bites made with wholesome Mediterranean ingredients — oats, banana, cottage cheese, olive oil, and warm spices.


🛒 Ingredients (Makes 24 mini bites)

Wet ingredients

  • 1 cup cottage cheese

  • 2 ripe bananas

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 tbsp olive oil (Mediterranean twist)

Dry ingredients

  • 1 cup rolled oats

  • 1 scoop (25g) vanilla protein powder (optional but recommended)

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • Pinch of salt

Optional add-ins

  • Mini dark chocolate chips

  • Blueberries

  • Chopped walnuts or almonds

  • Shredded coconut


🍽️ Instructions

1. Blend the batter

  1. Add cottage cheese, bananas, eggs, vanilla, and olive oil to a blender.

  2. Add oats, protein powder, baking powder, cinnamon, and salt.

  3. Blend until smooth and creamy.


2. Prepare the pan

  • Preheat oven to 350°F (175°C).

  • Grease a mini muffin tin with olive oil or line with silicone cups.


3. Fill & bake

  1. Fill each muffin cup ¾ full.

  2. Add your optional toppings (chocolate chips, blueberries, nuts, etc.).

  3. Bake for 12–15 minutes, until set and lightly golden.


4. Cool and enjoy

Let them cool 5 minutes before removing.
They stay soft, fluffy, and delicious!
