🍋🧄 Mediterranean Garlic Chicken with Broccoli & Spinach

✅ Ingredients (Serves 2–4)
For the Chicken

2 chicken breasts or 4 chicken thighs, sliced

2 tbsp extra-virgin olive oil
-
4–5 garlic cloves, minced
-
1 tsp dried oregano
-
½ tsp paprika (optional)
-
½ tsp dried thyme or rosemary
-
Salt & black pepper to taste
-
Juice of ½ lemon
-
Zest of ½ lemon
Vegetables
-
2 cups broccoli florets
-
2 cups fresh spinach
-
½ cup cherry tomatoes (optional but very Mediterranean)
-
¼ cup onion, thinly sliced (optional)
Finishing Touch
-
1–2 tbsp extra olive oil
-
Fresh parsley or basil
-
Crumbled feta (optional)
👩🍳 Instructions
1. Prepare the Chicken

Season sliced chicken with:
-
olive oil
-
garlic
-
oregano
-
paprika
-
thyme/rosemary
-
lemon juice + zest
-
salt & pepper
-

Mix well and let marinate 10 minutes (optional but better).
2. Cook the Chicken

Heat a large pan over medium-high heat.

Add a drizzle of olive oil.
-
Cook the chicken 5–7 minutes until golden and cooked through.

Remove from pan and set aside.
3. Add the Vegetables
-
In the same pan, add broccoli + a splash of water.
-
Cover and steam for 2–3 minutes to soften slightly.

Add spinach, cherry tomatoes, and onion.
-
Sauté 2–3 more minutes until wilted and vibrant.
4. Combine
-
Add the chicken back into the pan.

Toss everything together.

Drizzle extra olive oil and adjust salt + lemon.
5. Finish & Serve
Top with:

feta (optional)

extra lemon wedge
Serve with:
