Garlic Chicken with Broccoli and Spinach

🍋🧄 Mediterranean Garlic Chicken with Broccoli & Spinach

Healthy • 20 minutes • One-pan • Low-carb


Ingredients (Serves 2–4)

For the Chicken

  • 2 chicken breasts or 4 chicken thighs, sliced

  • 2 tbsp extra-virgin olive oil

  • 4–5 garlic cloves, minced

  • 1 tsp dried oregano

  • ½ tsp paprika (optional)

  • ½ tsp dried thyme or rosemary

  • Salt & black pepper to taste

  • Juice of ½ lemon

  • Zest of ½ lemon

Vegetables

  • 2 cups broccoli florets

  • 2 cups fresh spinach

  • ½ cup cherry tomatoes (optional but very Mediterranean)

  • ¼ cup onion, thinly sliced (optional)

Finishing Touch

  • 1–2 tbsp extra olive oil

  • Fresh parsley or basil

  • Crumbled feta (optional)


👩‍🍳 Instructions

1. Prepare the Chicken

  1. Season sliced chicken with:

    • olive oil

    • garlic

    • oregano

    • paprika

    • thyme/rosemary

    • lemon juice + zest

    • salt & pepper

  2. Mix well and let marinate 10 minutes (optional but better).


2. Cook the Chicken

  1. Heat a large pan over medium-high heat.

  2. Add a drizzle of olive oil.

  3. Cook the chicken 5–7 minutes until golden and cooked through.

  4. Remove from pan and set aside.


3. Add the Vegetables

  1. In the same pan, add broccoli + a splash of water.

  2. Cover and steam for 2–3 minutes to soften slightly.

  3. Add spinach, cherry tomatoes, and onion.

  4. Sauté 2–3 more minutes until wilted and vibrant.


4. Combine

  1. Add the chicken back into the pan.

  2. Toss everything together.

  3. Drizzle extra olive oil and adjust salt + lemon.


5. Finish & Serve

Top with:

  • fresh parsley

  • feta (optional)

  • extra lemon wedge

Serve with:
✔ quinoa • ✔ lemon rice • ✔ couscous • ✔ whole wheat pita
or enjoy it low-carb on its own.


💛 Mediterranean Tips

  • Add artichoke hearts or olives for more Mediterranean flavor.

  • Replace chicken with shrimp for a lighter version.

  • Add 1 tbsp pesto at the end for a basil twist.
