🥟🍲 Mediterranean Easy Wonton Soup

Light • Herb-infused • Comforting • 20 minutes


Ingredients (Serves 3–4)

For the Wontons

  • 20–25 wonton wrappers

  • 200g ground chicken or turkey

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tbsp finely chopped parsley

  • 1 tbsp finely chopped green onion

  • ½ tsp dried oregano

  • ¼ tsp black pepper

  • ¼ tsp salt

  • Optional: pinch of chili flakes

For the Mediterranean Broth

  • 6 cups chicken broth (low sodium)

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 small onion, sliced

  • 1 small carrot, thinly sliced

  • ½ cup baby spinach

  • ½ cup chopped tomatoes OR 8–10 cherry tomatoes

  • 1 bay leaf

  • ½ tsp oregano

  • ½ tsp thyme

  • Salt & pepper to taste

  • Juice of ½ lemon

  • Fresh parsley for garnish


👩‍🍳 Instructions

1. Make the Wontons

  1. In a bowl, mix:

    • ground chicken

    • olive oil

    • garlic

    • parsley

    • green onion

    • oregano

    • salt + pepper

  2. Place 1 tsp filling into each wonton wrapper.

  3. Wet the edges with water, fold into a triangle, and press tightly.

  4. Fold the two bottom corners together to seal (optional).


2. Prepare the Mediterranean Broth

  1. In a pot, heat 1 tbsp olive oil.

  2. Add garlic + onion; sauté 1 minute.

  3. Add carrot, tomatoes, oregano, thyme, bay leaf.

  4. Pour in chicken broth and bring to a gentle boil.

  5. Simmer 5 minutes.


3. Cook the Wontons

  1. Add wontons to the simmering broth.

  2. Cook 5–7 minutes until they float and the meat is cooked.

  3. Add spinach during the last minute.


4. Finish & Serve

Stir in:

  • lemon juice

  • salt & pepper to taste

Garnish with:

  • fresh parsley

  • a drizzle of olive oil

  • extra lemon if desired

  • Add feta crumbles before serving.

  • Swap spinach with kale or Swiss chard.

  • Add olives for a Greek twist.

  • Replace chicken with shrimp wontons for a lighter version.
