🍋 Mediterranean Chicken Bake

Ingredients (Serves 4–6)
For the Chicken & Vegetables

4 chicken breasts or 6 chicken thighs

1 large red onion, sliced
-
1 red bell pepper, sliced
-
1 yellow bell pepper, sliced
-
1 zucchini, sliced
-
1 cup cherry tomatoes
-
½ cup pitted olives (Kalamata or green)
-
3–4 garlic cloves, minced
-
3 Tbsp extra-virgin olive oil
-
Juice of 1 large lemon (plus zest if you like)
-
1 tsp dried oregano
-
1 tsp paprika
-
½ tsp cumin (optional but great)
-
½ tsp black pepper
-
1 tsp sea salt
-
1 tsp dried basil or thyme
-
¼ cup fresh parsley, chopped (for finishing)
Optional Add-Ins

½ cup crumbled feta
-
1 small potato, sliced thin
-
Chili flakes for heat
-
Artichoke hearts
🥘 Instructions
1. Preheat
Preheat oven to 400°F (200°C).
2. Season the Chicken
In a bowl, coat chicken with:

olive oil
-
lemon juice
-
garlic
-
oregano
-
paprika
-
cumin
-
salt & pepper
Let it sit for 10 minutes (optional but boosts flavor).
3. Prep the Veggies
Place all vegetables + olives in a large baking dish.
Drizzle with 1–2 Tbsp olive oil, salt, pepper, and a sprinkle of oregano. Toss.
4. Assemble
Lay the seasoned chicken pieces on top of the veggies.
Pour any remaining marinade over the dish.
5. Bake
Bake 35–45 minutes, depending on the size of the chicken.
Chicken should be golden and fully cooked.
6. Finish
Top with:
