Mediterranean Crack Breakfast Casserole

Ingredients

  • 1 tbsp extra-virgin olive oil

  • 250 g (½ lb) chicken or turkey sausage, crumbled

  • 6 large eggs

  • 1 cup Greek yogurt or light cream

  • 1 cup shredded mozzarella

  • ½ cup crumbled feta cheese

  • ½ cup grated Parmesan

  • 2 cups baby spinach, chopped

  • ½ cup diced red bell pepper

  • ¼ cup green onions, sliced

  • 1 tsp dried oregano

  • ½ tsp garlic powder

  • ¼ tsp black pepper

  • Salt to taste

Optional Mediterranean Add-Ins

  • Sun-dried tomatoes

  • Kalamata olives

  • Fresh basil or dill


Instructions

  1. Preheat Oven

    • Heat oven to 180°C / 350°F.

    • Lightly grease a baking dish (9×13 or similar).

  2. Cook Sausage

    • Heat olive oil in a skillet.

    • Brown sausage until cooked through. Drain excess fat.

  3. Mix Egg Base

    • In a large bowl, whisk eggs with Greek yogurt, oregano, garlic powder, salt, and pepper.

  4. Assemble Casserole

    • Spread sausage evenly in the dish.

    • Add spinach, bell pepper, and green onions.

    • Sprinkle mozzarella, feta, and Parmesan.

    • Pour egg mixture over everything.

  5. Bake

    • Bake 35–40 minutes until set and golden on top.

  6. Rest & Serve

    • Let rest 10 minutes before slicing.
