Mediterranean Crack Breakfast Casserole
Ingredients
1 tbsp extra-virgin olive oil
250 g (½ lb) chicken or turkey sausage, crumbled
6 large eggs
1 cup Greek yogurt or light cream
1 cup shredded mozzarella
½ cup crumbled feta cheese
½ cup grated Parmesan
2 cups baby spinach, chopped
½ cup diced red bell pepper
¼ cup green onions, sliced
1 tsp dried oregano
½ tsp garlic powder
¼ tsp black pepper
Salt to taste

Instructions
Preheat Oven
Heat oven to 180°C / 350°F.
Lightly grease a baking dish (9×13 or similar).
Cook Sausage
Heat olive oil in a skillet.
Brown sausage until cooked through. Drain excess fat.
Mix Egg Base
In a large bowl, whisk eggs with Greek yogurt, oregano, garlic powder, salt, and pepper.
Assemble Casserole
Spread sausage evenly in the dish.
Add spinach, bell pepper, and green onions.
Sprinkle mozzarella, feta, and Parmesan.
Pour egg mixture over everything.
Bake
Bake 35–40 minutes until set and golden on top.
Rest & Serve
Let rest 10 minutes before slicing.
