1 lb (450 g) ground chicken or turkey

2 tbsp extra-virgin olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

½ tsp dried oregano

½ tsp chili powder (optional)

Salt & black pepper, to taste

¾ cup Greek yogurt (Mediterranean swap for ranch base)

1 tsp lemon juice

1 tbsp fresh dill or parsley, chopped

1 cup shredded mozzarella
-
½ cup shredded mild cheddar or Monterey Jack

½ cup crumbled feta
-
1 cup crushed tortilla chips or pita chips

Optional: chopped jalapeños or olives
🔥 Instructions

Preheat oven
Preheat to 375°F (190°C). Lightly grease a mini-muffin tin. -
Cook the meat
Heat olive oil in a skillet. Sauté onion until soft. Add garlic, then ground meat. Cook until browned. -
Season
Stir in paprika, cumin, oregano, chili powder, salt, and pepper. Remove from heat and cool slightly. -
Make ranch-style mix
In a bowl, combine Greek yogurt, lemon juice, herbs, mozzarella, cheddar, and feta. -
Combine
Mix meat mixture with yogurt-cheese blend. Fold in crushed chips and optional add-ins. -
Fill & bake
Spoon mixture into muffin cups. Bake 18–22 minutes until set and golden. -
Cool slightly
Let rest 5 minutes before removing.
