🧺 Ingredients

  • 1 lb (450 g) ground chicken or turkey

  • 2 tbsp extra-virgin olive oil

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • ½ tsp dried oregano

  • ½ tsp chili powder (optional)

  • Salt & black pepper, to taste

  • ¾ cup Greek yogurt (Mediterranean swap for ranch base)

  • 1 tsp lemon juice

  • 1 tbsp fresh dill or parsley, chopped

  • 1 cup shredded mozzarella

  • ½ cup shredded mild cheddar or Monterey Jack

  • ½ cup crumbled feta

  • 1 cup crushed tortilla chips or pita chips

  • Optional: chopped jalapeños or olives


🔥 Instructions

  1. Preheat oven
    Preheat to 375°F (190°C). Lightly grease a mini-muffin tin.

  2. Cook the meat
    Heat olive oil in a skillet. Sauté onion until soft. Add garlic, then ground meat. Cook until browned.

  3. Season
    Stir in paprika, cumin, oregano, chili powder, salt, and pepper. Remove from heat and cool slightly.

  4. Make ranch-style mix
    In a bowl, combine Greek yogurt, lemon juice, herbs, mozzarella, cheddar, and feta.

  5. Combine
    Mix meat mixture with yogurt-cheese blend. Fold in crushed chips and optional add-ins.

  6. Fill & bake
    Spoon mixture into muffin cups. Bake 18–22 minutes until set and golden.

  7. Cool slightly
    Let rest 5 minutes before removing.
