SPAGHETTI & SPINACH WITH SUN-DRIED TOMATO CREAM SAUCE

🍝 Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce

🛒 Ingredients

  • 400 g (14 oz) spaghetti

  • 2 tbsp extra-virgin olive oil

  • 4 cloves garlic, minced

  • ½ cup sun-dried tomatoes, sliced (oil-packed preferred)

  • 1 tsp dried oregano

  • ½ tsp red pepper flakes (optional)

  • ¾ cup cooking cream or light cream

  • ¼ cup Greek yogurt or mascarpone (for Mediterranean creaminess)

  • ½ cup reserved pasta water

  • 3 cups fresh spinach, roughly chopped

  • ¼ cup grated Parmesan or Pecorino

  • Salt & black pepper, to taste

  • Zest of ½ lemon (optional but recommended)


👩‍🍳 Instructions

1️⃣ Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Cook spaghetti until al dente.

  3. Reserve ½ cup pasta water, then drain.


2️⃣ Make the Sun-Dried Tomato Cream Sauce

  1. Heat olive oil in a wide pan over medium heat.

  2. Add garlic and sauté 30 seconds until fragrant.

  3. Stir in sun-dried tomatoes, oregano, and red pepper flakes.

  4. Pour in cream and Greek yogurt; stir gently until smooth.

  5. Add reserved pasta water gradually until sauce is silky.


3️⃣ Add Spinach & Pasta

  1. Stir in spinach and cook just until wilted (1–2 minutes).

  2. Add spaghetti and toss to coat evenly.

  3. Mix in Parmesan, lemon zest, salt, and black pepper.


4️⃣ Serve

  • Drizzle with extra olive oil

  • Top with extra cheese or toasted pine nuts

  • Finish with fresh basil or parsley


🌿 Mediterranean Variations

  • Protein add-ins: grilled chicken, shrimp, or chickpeas

  • Dairy-lighter: replace cream with extra Greek yogurt + pasta water

  • Vegan: use cashew cream and nutritional yeast

  • Extra richness: add olives or artichoke hearts
