🥩 Mediterranean Ground Beef & Chopped Cabbage Skillet

Ingredients

  • 500 g ground beef (lean)

  • 4 cups green cabbage, finely chopped

  • 1 medium onion, thinly sliced

  • 3 cloves garlic, minced

  • 2 tbsp extra-virgin olive oil

  • 1 tsp ground cumin

  • 1 tsp paprika (smoked if possible)

  • ½ tsp ground coriander

  • ½ tsp black pepper

  • Salt, to taste

  • 2 tbsp tomato paste

  • ¼ cup crushed tomatoes or tomato sauce

  • 2 tbsp fresh parsley or dill, chopped

  • 1 tbsp lemon juice (optional, for brightness)


Instructions

  1. Brown beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart. Season lightly with salt and pepper.

  2. Add aromatics: Stir in onion and cook 3–4 minutes until softened. Add garlic and cook 30 seconds.

  3. Spice it: Add cumin, paprika, coriander, and black pepper; stir until fragrant.

  4. Tomato base: Mix in tomato paste and crushed tomatoes. Cook 2–3 minutes.

  5. Add cabbage: Fold in chopped cabbage. Cover and cook 8–10 minutes, stirring occasionally, until cabbage is tender but not mushy.

  6. Finish: Stir in herbs and lemon juice. Adjust seasoning and remove from heat.


Serving Ideas

  • Serve over brown rice, bulgur, or quinoa

  • Spoon into warm pita or flatbread

  • Enjoy as a low-carb bowl with yogurt sauce on top
