🍯🍋 Honey Lime Chicken & Avocado Rice Stack (Mediterranean Style)

Ingredients

Honey Lime Chicken

  • 500 g chicken breast, diced or thinly sliced

  • 2 tbsp extra-virgin olive oil

  • Zest & juice of 1 lime

  • 2 tbsp honey

  • 2 cloves garlic, minced

  • ½ tsp smoked paprika

  • ½ tsp ground cumin

  • Salt & black pepper, to taste

Rice Layer

  • 1½ cups cooked brown rice or basmati rice

  • 1 tbsp olive oil

  • 2 tbsp fresh parsley or cilantro, chopped

  • 1 tbsp lime juice

  • Salt, to taste

Avocado Layer

  • 2 ripe avocados, diced

  • Juice of ½ lime

  • Pinch of salt

Optional Toppings

  • Cherry tomatoes, diced

  • Crumbled feta cheese

  • Toasted pumpkin seeds or pine nuts


Instructions

  1. Marinate chicken: In a bowl, mix olive oil, lime zest, lime juice, honey, garlic, paprika, cumin, salt, and pepper. Add chicken and marinate 15–30 minutes.

  2. Cook chicken: Heat a skillet over medium heat. Cook chicken 6–8 minutes, turning, until caramelized and cooked through.

  3. Season rice: In a bowl, toss warm rice with olive oil, herbs, lime juice, and salt.

  4. Prepare avocado: Gently mix diced avocado with lime juice and salt.

  5. Assemble stack: Using a ring mold or bowl, layer rice → chicken → avocado. Press lightly and unmold.

  6. Garnish: Add tomatoes, feta, and seeds if desired.


Serving Suggestions

  • Serve warm or slightly chilled

  • Perfect as a meal-prep lunch or light dinner

  • Pair with a Mediterranean cucumber salad

Variations

  • Low-carb: Replace rice with cauliflower rice

  • Grilled version: Grill chicken for smoky flavor
