Mix until smooth and creamy.

Prep the Bread
Lightly butter one side of each bread slice. On the unbuttered side, spread the yogurt–mustard mixture (if using). -
Layer the Filling

Add mozzarella first (acts as glue).

Layer crispy bacon.

Scatter dill pickle slices evenly.

Sprinkle feta, optional cheese, and fresh dill.

Finish with black pepper and another light sprinkle of mozzarella.

Heat a skillet over medium-low with olive oil.
Place sandwich butter-side down. Cook 3–4 minutes per side, pressing gently, until bread is golden and cheese is fully melted. -
