Caramelized Brussels Sprouts with Melted Feta, Toasted Walnuts & Hot Honey Magic
Mediterranean Mezze–Style Side
🧺 Ingredients (Serves 4)

500 g (1 lb) Brussels sprouts, trimmed & halved

3 tbsp extra-virgin olive oil, divided

Salt & freshly cracked black pepper
For the Caramelization

1 tbsp balsamic glaze (or thick balsamic vinegar)

1 tsp honey
Toppings

½ cup feta cheese, crumbled

⅓ cup walnuts, roughly chopped
-
1 tbsp olive oil (for nuts)

1 tbsp fresh thyme or oregano, chopped
Hot Honey Magic

3 tbsp honey
-
½–1 tsp chili flakes (to taste)

½ tsp apple cider vinegar or lemon juice
🔥 Instructions
1. Roast the Brussels Sprouts
Preheat oven to 220°C / 425°F.
Toss Brussels sprouts with 2 tbsp olive oil, salt, and pepper.
Arrange cut-side down on a baking tray.
Roast 22–25 minutes until deeply caramelized and crisp.
2. Glaze
Remove from oven, drizzle with balsamic glaze and 1 tsp honey.
Toss gently and return to oven 5 minutes more.
3. Toast the Walnuts
While sprouts roast, heat 1 tbsp olive oil in a small pan.
Add walnuts and toast 2–3 minutes until fragrant.
Remove from heat and sprinkle lightly with salt.
4. Make the Hot Honey
Warm honey gently in a small saucepan.
Stir in chili flakes and vinegar/lemon.
Do not boil—just warm and infuse.
5. Assemble
Transfer hot Brussels sprouts to a serving dish.
Scatter feta over the top so it softens and slightly melts.
Add toasted walnuts and fresh herbs.
Drizzle generously with hot honey magic.
