Fresh Pickled Cucumber Salad (Mediterranean Style)

🧺 Ingredients (Serves 4)

  • 3 large English or Persian cucumbers, thinly sliced

  • ½ small red onion, very thinly sliced

  • ¼ cup fresh dill, chopped

  • 2 tbsp fresh parsley or mint, chopped

Quick Pickling Dressing

  • ¼ cup white wine vinegar or apple cider vinegar

  • 3 tbsp extra-virgin olive oil

  • 1 tbsp lemon juice

  • 1–2 tsp honey (to taste)

  • 1 clove garlic, finely grated

  • ½ tsp sea salt

  • Freshly cracked black pepper

Optional Mediterranean Add-Ins

  • Crumbled feta cheese

  • Kalamata olives, sliced

  • Cherry tomatoes, halved

  • Pinch sumac or red pepper flakes


🔥 Instructions

  1. Prep the Vegetables
    Place sliced cucumbers and red onion in a large bowl.
    Sprinkle lightly with salt and rest 10 minutes to release excess moisture.
    Gently drain (do not rinse).

  2. Make the Pickling Dressing
    Whisk vinegar, olive oil, lemon juice, honey, garlic, salt, and pepper until emulsified.

  3. Toss & Marinate
    Pour dressing over cucumbers.
    Add dill and parsley (or mint).
    Toss well to coat.

  4. Chill
    Refrigerate 20–30 minutes for best flavor (up to 24 hours).

  5. Finish & Serve
    Taste and adjust acidity or sweetness.
    Add feta, olives, or sumac if desired.
