🧀 Ritz Cracker Party Sandwiches (Mediterranean Style)

🛒 Ingredients

Base

  • 40–48 Ritz crackers

Creamy Filling

  • 225 g (8 oz) cream cheese, softened

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • 1 small garlic clove, very finely minced

  • 2 tbsp fresh parsley or dill, finely chopped

  • ¼ tsp black pepper

  • Pinch of salt (adjust—Ritz are salty)

Mediterranean Add-Ins (choose any)

  • ¼ cup sun-dried tomatoes, finely chopped

  • ¼ cup olives (Kalamata or green), minced

  • ¼ cup roasted red peppers, finely chopped

  • 2 tbsp capers, rinsed and minced


🔪 Instructions

  1. Make the Filling
    In a bowl, mix cream cheese, olive oil, lemon juice, zest, garlic, herbs, pepper, and salt until smooth.

  2. Add Mediterranean Flavor
    Fold in sun-dried tomatoes, olives, roasted peppers, or capers (use 1–2 for balance).

  3. Assemble Sandwiches

    • Spread about 1 teaspoon filling onto one Ritz cracker.

    • Top with another cracker and gently press.

  4. Chill (Optional)
    Refrigerate 30 minutes to help sandwiches firm up and flavors blend.
