Spinach and Cheese Puff Pastry Squares

🥐 Spinach & Cheese Puff Pastry Squares (Mediterranean)

Makes: 12 squares

Bake Time: 20–25 minutes


🛒 Ingredients

  • 1 sheet puff pastry, thawed

  • 2 tbsp extra-virgin olive oil

  • 1 small onion or shallot, finely chopped

  • 2 cloves garlic, minced

  • 200 g (7 oz) fresh spinach, chopped

  • ½ tsp dried oregano or dill

  • ¼ tsp black pepper

  • Pinch of nutmeg (optional)

  • Salt to taste

  • ¾ cup feta cheese, crumbled

  • ½ cup shredded mozzarella or kasseri

  • 1 egg, beaten (for egg wash)

  • Sesame or nigella seeds (optional)


🔪 Instructions

1. Prepare Filling

  1. Heat olive oil in a pan over medium heat.

  2. Sauté onion until soft; add garlic.

  3. Add spinach and cook until wilted and moisture evaporates.

  4. Season with oregano, pepper, nutmeg, and salt.

  5. Remove from heat; cool slightly.

  6. Mix in feta and mozzarella.


2. Prepare Pastry

  • Preheat oven to 200°C (400°F).

  • Roll out puff pastry slightly and cut into 12 equal squares.


3. Fill & Shape

  • Place a spoonful of spinach-cheese filling in the center of each square.

  • Fold corners inward slightly or leave open for a rustic look.


4. Brush & Bake

  • Brush pastry edges with beaten egg.

  • Sprinkle with seeds if using.

  • Bake 20–25 minutes until puffed and golden.


5. Cool Slightly & Serve

  • Let cool 5 minutes before serving.
