🍏 Baked Apple Fritters (Mediterranean Twist)

🧾 Ingredients

  • 2 medium apples (Honeycrisp or Granny Smith), peeled & diced

  • 1½ cups whole-wheat flour (or all-purpose)

  • ¼ cup honey or maple syrup

  • ⅓ cup Greek yogurt

  • 2 tbsp extra-virgin olive oil

  • 2 large eggs

  • ¼ cup milk (or almond milk)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp ground cinnamon

  • ¼ tsp nutmeg

  • 1 tsp vanilla extract

  • Pinch of sea salt

Optional Glaze

  • ½ cup powdered sugar

  • 1–2 tbsp fresh lemon juice or milk


👩‍🍳 Instructions

  1. Preheat Oven

    • Preheat to 375°F (190°C).

    • Line a baking sheet with parchment paper.

  2. Mix Wet Ingredients

    • In a bowl, whisk eggs, Greek yogurt, honey, olive oil, milk, and vanilla.

  3. Mix Dry Ingredients

    • In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  4. Combine & Fold Apples

    • Add dry ingredients to wet ingredients and stir just until combined.

    • Gently fold in diced apples.

  5. Bake

    • Scoop batter into mounds on the baking sheet.

    • Bake 14–16 minutes, or until golden and set.

  6. Glaze (Optional)

    • Drizzle with lemon glaze while warm.


🌿 Serving Ideas

  • Dust with cinnamon instead of glaze for lighter option

  • Serve with Greek yogurt & honey

  • Pair with mint tea or coffee

  • Store airtight up to 2 days

  • Reheat briefly in oven or air fryer for best texture
