🧾 Ingredients

2 medium apples (Honeycrisp or Granny Smith), peeled & diced

1½ cups whole-wheat flour (or all-purpose)

¼ cup honey or maple syrup

2 tbsp extra-virgin olive oil

¼ cup milk (or almond milk)

1 tsp baking powder

½ tsp baking soda

1 tsp vanilla extract

Pinch of sea salt
Optional Glaze

½ cup powdered sugar

1–2 tbsp fresh lemon juice or milk

Preheat Oven

Preheat to 375°F (190°C).

Line a baking sheet with parchment paper.

Mix Wet Ingredients

In a bowl, whisk eggs, Greek yogurt, honey, olive oil, milk, and vanilla.

Mix Dry Ingredients

In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Combine & Fold Apples

Add dry ingredients to wet ingredients and stir just until combined.

Gently fold in diced apples.

Scoop batter into mounds on the baking sheet.
