🍗 Chicken

4 boneless, skinless chicken breasts or thighs

1 tsp sea salt

½ tsp black pepper

1 tsp paprika

1 tsp dried oregano

2 tbsp extra-virgin olive oil
🍄 Mushroom Sauce

2 cups mushrooms (cremini or button), sliced

1 small onion, finely chopped
-
4 cloves garlic, minced
-
1 tbsp fresh thyme or 1 tsp dried

1 tbsp flour (optional, for thickening)

1 cup chicken broth
-
¾ cup heavy cream or Greek yogurt + cream mix
-
¼ cup grated Parmesan cheese

Juice of ½ lemon
🌾 Wild Rice

1 cup wild rice blend
-
2½ cups water or broth
-
½ tsp salt
-
1 tbsp olive oil
👩🍳 Instructions
1️⃣ Cook the Wild Rice

Rinse wild rice.

Add rice, water (or broth), salt, and olive oil to a pot.

Bring to a boil, cover, reduce heat, and simmer 35–40 minutes until tender. Fluff and set aside.
2️⃣ Sear the Chicken

Season chicken with salt, pepper, paprika, and oregano.

Heat olive oil in a large skillet over medium heat.

Sear chicken 4–5 minutes per side until golden. Remove and set aside.
3️⃣ Make the Creamy Mushroom Sauce

In the same skillet, add mushrooms and cook until browned.

Add onion and cook until soft.

Stir in garlic and thyme; cook 30 seconds.

Sprinkle in flour (if using) and stir 1 minute.

Pour in chicken broth; simmer until slightly thickened.

Lower heat and stir in cream, Parmesan, and lemon juice.
4️⃣ Finish

Return chicken to the skillet.

Cover and simmer 10–12 minutes until chicken is cooked through and sauce is creamy.
