🧾 Ingredients

600 g (1.3 lb) boneless, skinless chicken breasts or thighs

2 tbsp extra-virgin olive oil

3 cloves garlic, minced

250 g (9 oz) mushrooms, sliced

3 cups fresh spinach

½ cup Greek yogurt or light cream (unsweetened)

½ cup grated mozzarella cheese
-
¼ cup grated Parmesan cheese

1 tsp dried oregano
-
½ tsp dried thyme
-
¼ tsp chili flakes (optional)

Salt & freshly ground black pepper, to taste

Preheat Oven

Preheat to 190°C / 375°F.

Lightly grease a baking dish with olive oil.

Prepare the Chicken

Season chicken with salt, pepper, oregano, and thyme.

Place evenly in the baking dish.

Sauté Mushrooms (optional but recommended)

Heat olive oil in a pan over medium heat.

Sauté garlic and mushrooms until softened and lightly golden.

Assemble the Dish

Spread mushrooms over chicken.

Add spinach on top (it will shrink while baking).

Whisk Greek yogurt with a pinch of salt and pepper; spoon over the dish.

Sprinkle with mozzarella and Parmesan.

Cover loosely with foil and bake 25 minutes.

Uncover and bake another 5–10 minutes until chicken is cooked through and cheese is golden.
