🍗🌿 Chicken, Spinach & Mushroom Low-Carb Oven Dish (Mediterranean Style)

Creamy without heaviness, baked in olive oil, herbs & garlic

🧾 Ingredients

  • 600 g (1.3 lb) boneless, skinless chicken breasts or thighs

  • 2 tbsp extra-virgin olive oil

  • 3 cloves garlic, minced

  • 250 g (9 oz) mushrooms, sliced

  • 3 cups fresh spinach

  • ½ cup Greek yogurt or light cream (unsweetened)

  • ½ cup grated mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • ¼ tsp chili flakes (optional)

  • Salt & freshly ground black pepper, to taste

Optional Add-Ins

  • Sun-dried tomatoes (chopped)

  • Feta cheese instead of mozzarella


👩‍🍳 Instructions

  1. Preheat Oven

    • Preheat to 190°C / 375°F.

    • Lightly grease a baking dish with olive oil.

  2. Prepare the Chicken

    • Season chicken with salt, pepper, oregano, and thyme.

    • Place evenly in the baking dish.

  3. Sauté Mushrooms (optional but recommended)

    • Heat olive oil in a pan over medium heat.

    • Sauté garlic and mushrooms until softened and lightly golden.

  4. Assemble the Dish

    • Spread mushrooms over chicken.

    • Add spinach on top (it will shrink while baking).

    • Whisk Greek yogurt with a pinch of salt and pepper; spoon over the dish.

    • Sprinkle with mozzarella and Parmesan.

  5. Bake

    • Cover loosely with foil and bake 25 minutes.

    • Uncover and bake another 5–10 minutes until chicken is cooked through and cheese is golden.

  6. Rest & Serve

    • Let rest 5 minutes before serving.
